If someone is sufficiently skilled, can LAN be 'rigged' up to work by hacking into game files or something? Or is it just as simple as if the game wotn let, it cant be done? I don't think that's a realistic option unfortunately but I could very well be wrong about that , as I believe the game talks to the Steam servers to set up and connect two players together.

You can try and set up the laptop with internet as an access point, everybody connect to that point, and you should be able to play with friends.
